A Tasty Green Pile O’ Mush

It’s hard to make a green pile o’mush look tasty. While your eyes may be fooled, your tastebuds will thank you. 

Bissara is a Morrocan style dip traditionally made with fava beans but works beautifully with that leftover bag of split peas sitting in the pantry. It’s like the dip version of split pea soup. Serve with warm naan. If you can’t get fresh naan, Trader Joes sells some decent naan bread (don’t forget to toast it though!)

  • 2 tablespoons vegetable oil
  • 1 onion – chopped
  • 4 cloves garlic, crushed
  • 5 cups water
  • 1 cup chicken broth
  • 1/3 cup olive oil
  • 3 cups dry green split peas
  • 3 sprigs fresh parsley
  • 2 pinches of dried red chile pepper flakes
  • 2 teaspoons paprika
  • 1 tbs cumin
  • 1 pinch salt
  • 1 pinch black pepper

Fry garlic, onion, red chile, paprika, cumin, salt, and pepper in the vegetable oil in a large pot over low heat until fragrant (2-3 minutes). Pour in water and chicken broth; stir in split peas and parsley. Bring to a boil, then reduce heat to low, and simmer for about 55 minutes, stirring occasionally so that the peas do not stick to the bottom of the pot. When the peas are tender, mash them with a wooden spoon until smooth; stir in additional water to reach desired consistency. If you want a more pureed texture, use a hand mixture and whip for a minute or so.
