Part of the appeal of a pie is the crust. Why do I have to dig down through the fruit or cream mixture to get to pastry heaven? Here’s my solution to the strawberry pie – I’ll call it fresh strawberry cobbler
Note: This recipe tastes fantastic “unassembled.” Before serving, toss together the glazed strawberries, whip cream, and streusel topping for a messy treat! Do not let it sit for more than a hour as the streusel topping will get soggy.
Ingredients
1 cup graham crackers, crushed
3/4 cup quick oats
1.5 tsp cinnamon
5 tbs butter, melted
Directions
For the streusel topping, combine graham cracker crumbs, oats, and cinnamon in a bowl. Drizzle melted butter over the mixture and combine. Pinch the mixture until you get crumbs (the mixture won’t clump together due to the lack of brown sugar – I’ve omitted the brown sugar because the glaze is plenty sweet enough)
Follow directions for the recipe labeled Fresh Strawberry Pie under the Dessert category. Instead of arranging strawberries in a pie crust, arrange strawberries in a bowl with shallow edges. Drizzle strawberry glaze over strawberries and refrigerate.
Before serving, sprinkle struesel topping over strawberries. Garnish with whip cream.
